300g Feta, in alternative Haloumi or Kash Cheese
4-5 Zucchini
1 Tablespoon Parsley
1 Teaspoon Honey
1 Teaspoon Lemon Juice (or more, this depends on your taste)
2 Tablespoons of Extra Virgin Olive Oil
A pinch Salt

Directions
- Grill the zucchini:
Cut zucchini in half lengthwise, then slice into thin slices. Grill slices on a hot pan or grill (no oil needed) until they have beautiful grill marks. Set aside to cool. - Assemble your Skewers:
Cut cheese into cubes (I used Feta). Roll 1 or 2 zucchini slices around each cheese cubes, then thread each one of them onto skewers. Repeat until finished. - Prepare the lemon honey sauce:
In a bowl, whisk together olive oil, lemon juice, honey, salt, pepper, and chopped parsley until emulsified. - Serve it your way:
You can serve these grilled zucchini and feta skewers cold or warm.
– For a cold appetizer, drizzle the lemon honey sauce over the skewers just before serving.
– For a warm version, quickly grill or sear the assembled skewers in a hot pan, then pour over the sauce just before serving.
