Grilled Zucchini and Feta Skewers with Honey & Lemon Sauce

Have I told you that zucchini are among my favorite vegetables?! If not, I guess youโ€™ve figured it out from my Instagram – it’s zucchini season here in Israel, and Iโ€™m making the most of it! One of the perks of living in a warm country is a long zucchini season that starts early and lasts for months.

If you love zucchini as much as I do, you must try these easy grilled zucchini and feta skewers with honey lemon glaze. Theyโ€™re light, fresh, and packed with Mediterranean flavor. Whether you need a quick vegetarian appetizer, a light summer dinner, or something unique to serve at your next BBQ or happy hour, these skewers are the perfect choice.

  • Feta, Haloumi or Kash Cheese
  • Zucchini
  • Parsley
  • Honey
  • Lemon
  • Salt

Ingredients

  • 300g Feta, in alternative Haloumi or Kash Cheese

  • 4-5 Zucchini

  • 1 Tablespoon Parsley

  • 1 Teaspoon Honey

  • 1 Teaspoon Lemon Juice (or more, this depends on your taste)

  • 2 Tablespoons of Extra Virgin Olive Oil

  • A pinch Salt

  • Pepper

Directions

  • Grill the zucchini:
    Cut zucchini in half lengthwise, then slice into thin slices. Grill slices on a hot pan or grill (no oil needed) until they have beautiful grill marks. Set aside to cool.overhead shot grilled zucchini over pan
  • Assemble your Skewers:
    Cut cheese into cubes (I used Feta). Roll 1 or 2 zucchini slices around each cheese cubes, then thread each one of them onto skewers. Repeat until finished.close up of grilled zucchini and feta
  • Prepare the lemon honey sauce:
    In a bowl, whisk together olive oil, lemon juice, honey, salt, pepper, and chopped parsley until emulsified.close up of lemon honey sauce
  • Serve it your way:
    You can serve these grilled zucchini and feta skewers cold or warm.
    – For a cold appetizer, drizzle the lemon honey sauce over the skewers just before serving.
    – For a warm version, quickly grill or sear the assembled skewers in a hot pan, then pour over the sauce just before serving.

Can I make these skewers in advance?
Yes. You can grill the zucchini and prepare the cheese ahead of time. Assemble skewers a few hours before serving and store them covered in the fridge. Drizzle sauce just before serving.

Can I use other cheeses besides feta?
Absolutely. Halloumi and Kashkaval are great alternatives. For a milder flavor, try goat cheese (but donโ€™t grill it).
